Orange-Rum Macaroons

No, I didn't spell macarons wrong. This is about macaroons. And sadly, not about macarons. I won't go into technical differences - suffice to say that macarons are dainty little things that are super-difficult to make (at least I think so!) and macaroons are a lot sturdier, and takes five minutes to make. Both are delicious. This version has orange zest and dark rum, which makes these coconutty delights even more irresistible.

Orange-Rum Macaroons
makes 15

50 g butter
2 eggs
100 g sugar
175 g coconut flakes (unsweetened!)
1 orange - the zest
1 tbsp dark rum
1 tsp vanilla extract

Melt the butter. Whisk the eggs and sugar with coconut, orange zest, rum and vanilla. Add the melted butter. Leave the batter to rest for ten minutes, then shape into small mounds on a baking sheet. Bake for 15 minutes at 175°C.
